A Guide to Cooking with Archie Rose Whisky and New Make

There’s nothing quite like a global pandemic and nation-wide semi-lockdown to get the creative juices flowing in your kitchen. Nor is there a better time to experiment with your favourite Archie Rose spirits in more ways than your afternoon knock-offs. Here are some brilliant, indulgent ways to make the most of that bottle of Rye Malt Whisky and Six Malt New Make in the kitchen.

Cooking With Rye Malt Whisky

Been enjoying the newly-crowned “World’s Best Rye Whisky” Archie Rose Rye Malt Whisky? Excellent! While we usually wouldn’t recommend using such a primo product in your cooking, this spirit’s notes of peach cobbler with vanilla ice cream and caramel sauce—finishing with caraway seed, sweet spices and a hint of salinity mean it’s incredibly balanced in sweet, indulgent desserts. This recipe for Fancy Pecan Pie will make every other pie feel like a disappointment to its parents. It’s chewy and sweet and just the right portion size (a whole pie) for sharing between two in self-isolation. Or why not try this old-school tiramisu? Ditch the rum, sub in our Rye Malt Whisky and you have yourself one genius spiked dessert.

Put your kitchen skills to the test and start the weekend by clocking off from your WFH desk (or couch, we don’t judge) and cutting to the chase with Gourmet Traveller’s Whisky Caramel Crèmes or this rich chocolate mousse cake, elevated with a generous splash of our finest. If you’re not diving into dessert first, how about adding a little Rye Malt to the gravy in your golden roast chicken? Or this sweet and savoury recipe for whisky prawns really works as a substitute for a lightly peated Scotch. And remember, there is no world in which the layered aromatics of our Rye Malt don’t match extremely well with sticky, dark, tender short ribs. Lastly, we all think we’ve tried the best choc chip cookie out there, but you really haven’t until you’ve tried Bon Appétit’s Whisky and Rye Choc Chip Cookies.

Cooking With Six Malt New Make

Sure, drinking New Make may be unchartered territory, but we firmly believe cooking with this unusual unaged spirit should be approached with the same enthusiasm. Baking more than usual while working from home? Clever cookie. If you are lucky enough to grab a bottle of our Six Malt New Make, try subbing it in these cinnamon and raisin brownies with whisky syrup to highlight its earthy notes of dark chocolate, coffee and roasted nuts. Swap it in place of whisky in this boozy salted caramel sauce, perfect for drizzling over ice cream. And finally, perhaps the best was left till last, the sundae. Boozified and sweet – the best kind of everything. Enjoy.
