We know this one sounds weird, but trust us, it’s weirdly amazing.
- 60ml pineapple juice
- 20ml of coconut syrup*
- 2 teaspoons of cottage cheese
- 10ml of lime juice
Pineapple wedge, mint sprig and a pineapple leaf.
Combine all the ingredients together in a cocktail shaker. Shake hard, strain over ice. Garnish like a tiki god.
*To make the coconut syrup, toast 100g desiccated coconut and add to 1L sugar syrup (1:1 sugar to water ratio). Leave for 1 hour, then fine strain. Coconut syrup will keep in the fridge for up to 14 days.
