Mountain Yuzu Gin Bird of Paradise Fizz

Ingredients
  • 50mL Archie Rose Mountain Yuzu Gin
  • 20mL cream
  • 10mL egg white
  • 15mL raspberry syrup
  • 20mL lime juice
  • 1 drop orange blossom water
  • 30mL soda or sparkling water
Method

  1. Combine all the ingredients in a shaker, shake incredibly hard, for as long as you can.

  2. Strain into a highball glass (no ice).

  3. Put the glass in the fridge for a couple of minutes, then slowly top with 30ml of sparkling water. The foam should rise above the glass, proud and firm.

  4. Garnish with a rose petal and a straw.
