Flavour profile
Nose
Opens with the unmistakable, complex and rich scent of fresh yuzu peel, expressed here with the complex interplay of ripe mandarin, Meyer lemon zest, makrut lime and fresh grapefruit. The citrus is supported by a peppery juniper, which provides pine, fresh basil and thyme stalks.
Palate
The palate has an abundance of fresh citrus (ripe orange, lemon and mandarin peel) which is given a bold intensity by juniper's fresh pine and black pepper.
Finish
The finish is long with the myriad of citrus flavours wrestling with the juniper all the way to the persistent fade.
Local & Ethically Sourced Ingredients
Our Harvest Series was born in 2019 to celebrate the bounty and diversity of the annual Australian harvest. Each release heroes a lead, local or native ingredient and showcases its provenance, grower and region as a true expression of our spirit-making ethos.

The yuzu is cultivated by growers Jane and Brian Casey on rich volcanic soils near Mt Buffalo, in the Ovens River region.

Emerald Green Finger Lime offers an intense acidic lime flavour with bitter notes. As for aroma, think kaffir and Mankrut limes meet lemongrass.

Valencia Orange Zest is sweetly scented like an orange starburst. It offers zingy acidity and tanginess with a uniquely refreshing citrus twist.

Tahiti Lime offers a zesty top note and an overall acidic, bright and subtly sweet green flavour. It's generally less bitter and has a more subtle citrus flavour compared to other limes.
