Since 2014, we've archived a case or two of every Australian spirit we've produced at both our Rosebery and Botany Distilleries. We're now dropping a limited selection of this archive stock online, giving you the opportunity to grab a final bottle of your favourite Archie Rose spirit.

A cask strength, single cask of our Riverina sourced heritage rye malt, fully matured in an Australian apera cask. A mix of wild and early commercial rye varieties cultivated in Western NSW, our heritage rye grain has a darker, smaller seed than modern conventional rye. Grown exclusively by our malting partners Voyager on their farm, this grain features an earthy, fresh rye bread aroma with a toasty and biscuity like sweetness and a classic spicy finish.

Flavour profile

Nose

Honey-poached apricots lead the way along with rich black cherries and plums. The rich fruit is well supported by a complex spice medley of crushed ginger root, black pepper and caraway seeds.

Palate

Rich and mouth-filling layers of concentrated fruit are again evident, with the addition of some lovely gently toasted cedar and delicate violet revealing themselves.

Finish

Rich apricot and cherry continue long into the finish, with toasted cedar and violets providing the final florish

Local & Ethically Sourced Ingredients

Selected for its exceptional qualities, this single apera cask offers an explosion of rich fruit character balanced by the nutty spice of heritage rye. As a uniquely Australian style of fortified wine, apera lends beautiful notes of dried apricots, muscatel grapes and fine oak, resulting in a whisky with a nose of honey-poached apricots and stewed plums and complex spice on the nose along with expansive palate layers of concentrated fruit, gently toasted cedar and delicate violet.

Apera CaskOrigin: Australia

Australian apera is a fortified wine similar to Spanish sherry. It's used to season American or French Oak casks, offering a flavour profile that's usually made up of nutty and dried fruit notes like figs and prunes.

Heritage Rye MaltOrigin: Barellan, NSW

This landrace rye has been grown in central NSW for over 70 years, adapting to droughts, floods and storms to evolve into its own distinct strain, found nowhere else on earth. Reflecting the character of regional Australia, it contributes flavours of eucalyptus, shortbread and cinnamon.

Pale MaltOrigin: La Trobe, Victoria

Our pale malt speaks to the Australian land where it was grown, delivering tropical fruit flavours with floral overtones.
