The Still Room
When we started production 11 years ago, the Rosebery distillery in Sydney was a bustling production space. A nimble forklift deftly darted between the narrow cask racks overflowing with bulk liquid tanks, alongside our mash tun and fermenters. The three original stills worked around the clock to produce enough liquid to fill the shelves of bottle shops near you. It’s quite incredible to think of all the products that were created in this relatively small room. From our first signature range products, filled by hand, with batch numbers and dates handwritten on the side. To the research and development for early limited products such as ArchieMite, Opera House gins, Hunter Valley Shiraz Spirit created alongside coopering, cask-filling and the postage of packages whizzing out the door to you. Our malt stream process started here, but we knew it could never truly be realised in this limited distillery. We needed somewhere bigger. After five busy years, we’d outgrown our original home, and built our new distillery in Banksmeadow, Sydney. Over the past couple of years, we've been using our original distillery for experiences with a temporary bottle shop serving our local neighbourhood and guests of the venue.
We began working on the new vision for the space, designed properly for its new persona as an experience room and bottle shop. The old distillery has been rechristened as The Still Room, with our three original stills still glinting, retired and showing signs of the hard work they did during the years we called Rosebery our production home. Joining them in the space, along the south wall, we've built a new imposing bar, seemingly reaching to the heavens, laden with our spirits. We’ve put in fans and heaters, as the old tin shed has always been a little exposed to the elements. And leading you to the still room is a brand new retail space. You can peruse all our current spirits here (including a couple of old rare finds you can't buy anywhere else), you can even personalise your own bottle while you wait. In just a few minutes, you can select a blend of whisky, gin or vodka and personalise the label for a loved one. If you want to try the liquids before you buy, pop in and ask one of our team to walk you through the range. Then you can choose your background, compose a message, and our team will create your truly original gift. Perfect in time for Christmas to come and sort out your gifts in one spot.
We can’t wait for you to come down and see what we’ve been working on. The bar is open as always, but now across the cage we have a purpose-built, suitably beautiful, new home for our globally recognised, award-winning experiences.
