The Newest and Brightest of Sydney's Hospitality Scene
The winds of change are sweeping through Sydney lately, with a string of ace new hospitality openings over the summer and even more slated for 2025. Across the CBD, Surry Hills and Redfern, we’re making reservations at the following new bars and restaurants.
Baptist Street Rec. Club is a new neighbourhood cocktail bar and wine tavern in Redfern’s Wunderlich Lane precinct, and it plays on pure nostalgia. The decor is unexpectedly eccentric and leans right into the aesthetics of 1980s and ’90s Australia. See if you can spot the four retro Archie Rose posters plastered around the venue’s walls while sipping a Strawberry Daiquiri or Trinidad Sour, both made with our spirits.

The sophisticated 100-seat Bar Julius also opened in February at Wunderlich Lane in the lobby of Sydney’s new glamorous The EVE Hotel. This Euro-inspired bar and eatery opens early and closes late, serving bistro classics all day long.
Come evening, order the White Martinez with our Signature Dry Gin Bar or the Julius x Archie Rose Whisky Highball to try the Tailored Single Malt Whisky we created exclusively for them.
A pop-up cocktail bar high on neon and low on pretention, Little Cooler is bringing retro back to Sydney’s cocktail scene with a menu and the playlist to match. With the site set for demolition in 2026, Little Cooler is here for a good time, not a long time.
The International is a three-level hospitality precinct from the team behind Shell House, which opened back in November 2024. Sip on Archie Rose across the floors at their multiple venues: The expansive Wine Bar, The Grill and Panorama Bar. Martin Place just keeps getting better and better.
Back in January, Surry Hills welcomed a pair of new venues under the same roof on Albion Street by the team behind the beloved neighbourhood corner bar, Bar Copains. At Bessie’s, watch the team cook over the woodfired grill as they prepare dishes for a shared-plate Mediterranean-style menu. Meanwhile, Alma’s is bringing classic cocktail bar vibes, with old favourites on the menu, such as the Miami Vice. In a stroke of brilliant design, there are drawers built into Alma’s tables where you and yours can rid yourselves of distraction and stash the phones away.

Tilda and its next door bar, Bar Tilda, are recent venue openings by the Sydney-based House Made Hospitality group. Located side by side in the lobby of Sydney’s landmark Sofitel Wentworth, Tilda’s menu features the most lavish version of a bread-and-butter starter we’ve ever seen, alongside a plethora of fresh Australian seafood. Two cocktails on the menus are made with Archie Rose spirits: the Tilda Martini made with Archie Rose Lemon Scented Gum Harvest Gin and the Golden Wattle Highball with our Double Malt Whisky. Bar Tilda also keeps an extensive Archie Rose Whisky collection and offers a very special tableside Martini experience showcasing their signature martini ritual, pouring with your choice of Archie Rose Signature Dry Gin, Native Botanical Vodka or our Single Malt Whisky.
