Queensland
In Brisbane, head to the very freshly opened Barry Parade Public House for a vibrant spot with an ever-evolving drinks list led by a wonderfully experienced team. Naldam House offers a heritage-inspired venue with cozy leather booths and expertly crafted Juleps, Coolers and more, while Milquetoast’s pint-sized laneway space pairs seasonally inspired drinks and a Deviled Egg dish you seriously need in your life. To add a little polish to your summer sipping, don’t miss Stan’s Lounge, nestled above Stanley at Howard Smith Wharves, serving up the flavour of old-world Hong Kong and vinyl on the decks.
If whisky’s your speed this summer, Frog’s Hollow Saloon is a neat speakeasy-style haven of the stuff, with a toastie menu to match, while the sheer scale of the back bar at Savile Row, with over 900 spirits, will impress even the most well-travelled among us. For a more laid-back experience, drop by Bar Soma in Hervey Bay for vibrant drinks in a chilled coastal setting or Santé in Toowoomba for drinks under twinkling lights. On the Sunshine Coast, WAT Den zooms in on whisky and tequila within steps distance of Mooloolaba Beach, while Rosella’s on the Gold Coast offers a retro-chic homage to Australiana, complete with drinks inspired by Fantales and Guava Cruisers and other classics.

Over in Paddington, Saint Peter is in its new home at The Grand National Hotel, which now boasts a larger dining room, private dining, a spectacular bar, and 14 boutique rooms. At Attenzione! restaurant and wine bar in Redfern, they keep it neighbourly with their unpretentious, delicious approach to pasta, modern snacks and wine and our drop-in-on-your-way-home vibes. The focus at The Waratah’s public bar downstairs is a weekly rotating cocktail menu that focuses on the availability of local produce, while the upstairs restaurant spotlights individual growers and producers region by region via its seasonal menu. Over in North Melbourne, Earth Angels has quickly become both a local favourite and a destination spot for those further afield, with a tightly curated cocktail list and a collection of adventurous wines. Maggie’s has bolstered what has become a bustling food and drink scene on Lygon Street in Brunswick East, showcasing a seasonal menu with a Kiwi focus, cutting-edge cocktails and a broad list of wines. In a warm, inviting space, Northcote’s Goodwater is known for its incredible American whisky selection and snacks with a USA bent.
A Thai grill? Wild-fermented drinks? Bar Spontana in Footscray packs a punch. Over in Footscray, Misfits is the spot to catch local art and music and a drinks list that celebrates local, too. For an intimate basement experience, make the most of Daisy and its excellent aperitivo hour down in Geelong.
Tasmania
Tassie bound? Westside Laundry is a lively Hobart café and diner by day, transforming into a cozy, booze-friendly venue by night. Rude Boy, under new ownership this year, remains a classic choice for rum cocktails and fried chicken; when is that combo ever not a crowd-pleaser?

In South Cottesloe, Gibney offers refined seaside dining with a stellar drinks list, while Margot’s in Northbridge blends two of life’s better things: Martinis and seafood towers. Over in Fremantle, come to Ode To Sirens for the Greek-leaning menu, and stay for the Charlie Chaplins and vinyl.
