Morgan McGlone’s Take On StickyBeak Festival
Morgan McGlone is a third-generation chef and the co-owner of Sydney institution Bar Copains, Bessie’s Restaurant and Alma’s, a few doors up the road. Alongside partners Nathan and Sali Sasi, he’s also just taken the reins of Darlinghurst Bar Vincent. If that isn’t enough, he happens to be a keen potter (you can get your hands on a limited number of his ceramics via DRNKS).
Morgan has been a key player in each of our StickyBeak festivals so far, and we’re thrilled to have him back again as part of our fourth StickyBeak, which will be held at The Goods Line, Ultimo on 4 and 5 of April. “I love the vibe and camaraderie of StickyBeak”, Morgan reflects. “Nina and the team make the execution of the event look so fun and easy”.
We always expect something hot and saucy from Morgan, and this StickyBeak Festival promises to be no different, as he plans to bring the Tabasco once again. “This is my third year working as an Ambassador with Tabasco. It's a brand everyone has used or continues to use in their workplace or homes. I'm honoured to be featuring some dishes showcasing the diversity of the Tabasco brand.”
At the upcoming StickyBeak Festival, he’ll put the Tabasco to work with a selection of fiery and indulgent dishes. “This time around, I'm looking forward to doing my rendition of Buffalo wings and fried cauliflower dishes for our vegetarian friends. I'm also thinking about doing a Cajun Crab Toast, if I can get a good crab product.”
When he’s not flinging wings at the festival, he plans on doing the rounds and checking in with some of his other Sydney favourites. “There is always a great lineup at StickyBeak”, he shares. “This year, I’m particularly looking forward to seeing the P&V team, Attenzione!, Ho Jiak, TAKAM and Lankan Filling Station, to name a few”.
