Heeding our ethos of working with local producers who focus on sustainability and understand the impact of their growing, harvesting and processing methods, our annual vintage Harvest Series heroes the growers, providores, foragers and regions as a true expression of the ingredients and provenance behind our spirits.
Our Harvest Gin 2021 spotlights aromatic lemon scented gum grown by Cyan and Martin at Bunyip Hollow in Victoria. The Australian native is underpinned by emerald green finger lime, juniper, coriander seed and orris root, resulting in an audacious announcement of lime sherbert, apple blossom and pine, followed by nostalgic flavours of lemon icy poles, mango and eucalyptus lollies.
Tasting Notes
Nose
Instantly greeted with a generous combination of fresh yuzu, pine, lime sherbert, and eucalyptus. Further investigation leads us to freshly crushed gum leaves, apple blossom and pineapple chunks.
Palate
The palate is syrupy and warming, with notes of lemon icy poles, mango gelato, eucalyptus, lime blossom, and white gardenia.
Finish
The finish is long and evolving, with notes of makrut lime leaf, pine needles, lemon flesh and eucalyptus leaf.
