Since 2014, we've archived a case or two of every Australian spirit we've produced at both our Rosebery and Botany Distilleries. Our High-Test Molasses Rum, the third release in our Trials & Exceptions series, highlights the elegant finesse of high-test molasses, with a touch of blackstrap molasses for added richness. Distilled in copper pot stills and aged in Australian Port casks, this overproof rum at 72.7% ABV offers a unique balance of sweet and savoury notes like sea spray, Anzac biscuits, and sticky date pudding.
