Local & Ethically Sourced Ingredients
Emulating a tradition of maturing whisky in sherry and ex-bourbon casks, Classical Whisky is made from the highest quality Australian malts. It pays tribute to the clarity and focus of classically styled Scottish and Japanese whiskies while honouring the provenance and ingenuity that underpins Archie Rose’s award-winning range of Australian malt whiskies.

Australian apera is a fortified wine similar to Spanish sherry. It's used to season American or French Oak casks, offering a flavour profile that's usually made up of nutty and dried fruit notes like figs and prunes.

This is an American Oak cask that's been seasoned with Bourbon whisky and quite often it's heavily charred. It's known for the same flavour profile as Virgin American Oak with some additional sweet flavours that are more subtle and nuanced.

Our pale malt speaks to the Australian land where it was grown, delivering tropical fruit flavours with floral overtones.
