Tasting Notes

Nose

Aromatics of lemon sherbert, orange zest, and mandarin juice. Supporting the citrus sits rock candy, lavender, and jasmine with just a hint of eucalyptus leaf and green tea.

Palate

A mouth-coating texture, reminiscent of sticky orange marmalade. A symphony of citrus joined by an array of white and purple flowers, followed by pine and some subtle coriander spice.

Finish

Tangerine zest, lime juice, and pine persist, with a touch of citrus pith creating a lovely dry finish.

Mandarin Peel
Origin: New South Wales

Mandarin Peel delivers bright and juicy citrus notes to anything it's added to and smells like zesty tangelo. It's uplifting, fruity and fun.

Emerald Green Fingerlime
Origin: Red Gully, WA

Emerald Green Fingerlime offers an intense acidic lime flavour with bitter notes. As for aroma, think kaffir and Mankrut limes meet lemongrass.

Tahitian Lime
Origin: Mareeba, QLD

Tahiti Lime offers a zesty top note and an overall acidic, bright and subtly sweet green flavour. It's generally less bitter and has a more subtle citrus flavour compared to other limes.

Juniper
Origin: Macedonia

A classic gin botanical, Juniper (Juniper Berries) tastes piney, citrusy, woody and floral. The citrusy undertones lend a zesty and refreshing touch, while the woody aspect offers a hint of warmth and depth.

Coriander Seed
Origin: Mundoora, SA

Coriander Seed offers a warm, nutty flavour with hints of lemon, lavender and orange. It's a classic herbal element of the London Dry profile.

Lemon Scented Gum
Origin: Wodonga, Victoria

The leaves from the Lemon Scented Gum tree are long and slender with a beautiful lemon fragrance when crushed. The aromatic lemon scented gum used in our spirits is grown by Cyan and Martin at Bunyip Hollow in Victoria.

River Mint has a flavour profile similar to peppermint and sweet spearmint alongside complex herbal elements; it's also know for its antioxidant properties.

Dorrigo Pepperleaf
Origin: Northern Tablelands, NSW

Dorrigo Pepperleaf is a native green leaf pepper with a sharp, hot and unique spicy flavour, and a unique aroma that's a mix of dried basil, tomato water and peppercorns.

Orris Root
Origin: Morocco

Orris Root imparts flavours and aromas of flowers, hay and sweet earthy scents and a taste comparable to liquorice. It also helps to bind other flavours.
