Single Paddock Whisky Harvest 2018 honors a resilient heritage rye paddock cultivated by the Whytcross family in Barellan, NSW during the challenging 2018 drought. The rye was dry grown without irrigation, triple-fermented, and malted with a saison yeast strain, resulting in a distinct profile of wildflowers, mandarin, yuzu, and berries. Unfiltered with flakes of charcoal and at cask strength, this is a whisky for serious spirit lovers.

Tasting Notes

Nose

Mandarin, yuzu and Anzac biscuits greet you, followed by notes of orchard fruits, begonia blossoms and huon pine to emerge. Further time in the glass gives us roasted pecans, mulberry and carraway seeds.

Palate

A rich and mouth-filling combination of nectarines, berries and ginger snaps balanced beautifully with roasted grains, milk chocolate and oak.

Finish

A complex and lingering combination of orchard fruits, chocolate-coated Anzac biscuits, and blossoms.

Amber Heritage Rye Malt

This intense amber malt has an upfront yet pleasant biscuity, burnt toast and subtle coffee profile. It's sourced from Barellan, NSW, before being gently roasted and steamed.

Choc Heritage Rye Malt
Origin: Barellan, NSW

Grown in Barellan, NSW, by the Whytcross family this is a tasty lighter stye chocolate malt that imparts a slight sweetness, smooth bitterness and classic cocoa, latte, caramel and burnt toast characteristics.
