Tasting Notes

Flavour profile
Nose
Opens with a charcuterie board of smoked meats, maple syrup glazed bacon, campfire and damper. There is a floral accent to the smoke with lilacs, rose and frangipani. Subtle sultans, raisins and dates add intensity but do not steal the show from the complex interplay of traditional and new world smoke.
Palate
A complex and lingering palate with smoked chocolate, hand-roasted chestnut, coffee and pork crackling.
Finish
A long and well weighted palate with ginger snap biscuits, ashy smoke and swiss dark chocolate.
Local & Ethically Sourced Ingredients
Celebrating our commitment to uniquely Australian flavours, this cask is a peat-lover’s dream, offering notes of outback campfire smoke, chocolate and pork crackling tempered by Australian fortified wine.

Australian apera is a fortified wine similar to Spanish sherry. It's used to season American or French Oak casks, offering a flavour profile that's usually made up of nutty and dried fruit notes like figs and prunes.

Malted in NSW using locally sourced barley and Australian native stringybark wood smoke. Rich, smoky notes of Australian campfire and prosciutto.

Our local amber malt is made by roasting kilned malt which leads to a drier finish. it offers a light, biscuity flavour and dark reddish brown hues.
