Distilled from carefully selected toasted amber malt, it was matured in an American oak ex-bourbon cask, resulting in a single malt whisky with an exceptional balance of sweet fruit and savoury malt.
The nose offers evocative aromas of sun-ripened passionfruit, cookies-and-cream ice cream, and jelly beans, while the palate delivers pineapple, cinnamon muffins, and Maltesers in a stunning display of rare quality.

Tasting Notes


Flavour profile
Nose
Opening on the nose with the evocative aromas of sun-ripened passionfruit, cookies and cream ice cream and white jellybeans. There is a savoury backbone here, giving candle wax, oatmeal and sultana.
Palate
The palate is chewy, unctuous and rich in texture, occupying every crevice and conveying flavours of tinned pineapple, cinnamon muffins, roasted pecans, Maltesers and citrus sherbert.
Finish
The finish is long and dovetails perfectly with faint traces of digestive biscuit and creme anglaise.
Local & Ethically Sourced Ingredients

This is an American Oak cask that's been seasoned with Bourbon whisky and quite often it's heavily charred. It's known for the same flavour profile as Virgin American Oak with some additional sweet flavours that are more subtle and nuanced.

Our pale malt speaks to the Australian land where it was grown, delivering tropical fruit flavours with floral overtones.

Our local amber malt is made by roasting kilned malt which leads to a drier finish. it offers a light, biscuity flavour and dark reddish brown hues.
