Marking a significant new chapter in our whisky journey, we are proud to unveil our first-ever age-statement release: Single Cask Whisky Batch #3 SM1231 - Six Year Old Single Malt Whisky

This rare single cask of Single Malt Whisky has been matured in an Australian fortified wine (apera) cask for over six years. Hand-selected from thousands of casks for its bold, intense charm, this is also our first age-statement release. Having matured at a later stage than its sibling casks, it highlights the distinctive nature of this particular barrel.

It offers notes of dark chocolate-coated figs, raspberry jam, and pecan pie. The palate reveals flavours of French pastries, maple syrup, and a surprising flourish of floral elements.

Only 130 bottles available.

Matured in a hand selected Australian fortified apera cask for over six years.

Flavour profile

Nose

Opens with a swathe of Belgian dark chocolate, with notes of spearmint lollies, raspberry jam and French canneles.

Palate

The palate is rich and bold with milk chocolate-coated dried figs, pecan pie and maple syrup supporting floral frangipane and parma violets.

Finish

The finish is expressive and focused with the floral elements giving way to rich pastry-laden flavours and resolving with Vietnamese coffee. A whisky for lovers of fortified wine cask cask-matured spirits.

Australian Apera Cask (Single Cask)

Matured for over 6 years. Australian apera is a fortified wine similar to Spanish sherry. It's used to season American or French Oak casks, offering a flavour profile that's usually made up of nutty and dried fruit notes like figs and prunes.

Pale MaltOrigin: La Trobe, Victoria

Our pale malt speaks to the Australian land where it was grown, delivering tropical fruit flavours with floral overtones.

Amber MaltOrigin: New South Wales

Our local amber malt is made by roasting kilned malt which leads to a drier finish. it offers a light, biscuity flavour and dark reddish brown hues.

Caramel MaltOrigin: La Trobe, Victoria

Batch roasted to bestow a rich cereal character, this malt delivers notes of pastry and the aroma of caramel fudge.
