Tasting Notes

Nose

Starts with the beguiling and lifted aromatics of juniper which offers lime blossom, apple and an abundance of fresh pine. There is a subtle citrus back bone with lemon and mandarin supported by subtle green tea, figs and watermelon.

Palate

An evolving and complex array of flavours moving from stonefruit to citrus with fresh garden herbs, pine and very subtle eucalyptus.

Finish

A touch of sweet lemon wrestles with dry juniper with the pine and lime always always having the upper hand. A complex, persistent and lingering finish.

Core Botanicals potato QA

Featuring eight individually distilled botanicals; including sunrise lime and Geraldton waxflower; both native to Western Australia; and Dorrigo Pepperleaf sourced from Northern NSW; this spirit unites the east and west coasts to deliver a quintessentially Australian dry gin that offers a complex array of flavours.

Australian Apera Cask
Origin: Australia

Matured for over 5 years. Australian apera is a fortified wine similar to Spanish sherry. It's used to season American or French Oak casks, offering a flavour profile that's usually made up of nutty and dried fruit notes like figs and prunes.

Virgin American Oak

Matured for nearly 6 years in virgin American oak. Imparting high levels of vanilla, sweet spices and coconut. The oak in these casks is air-dried then toasted and charred for us to help create our signature flavour profile.

Emerald Finger Lime
Origin: Mavrick Native Farms, WA

Grown in the coastal air of Western Australia — and individually picked by hand — Emerald Green Finger Limes are native to Australia and renowned for their iconically vibrant pearls and citrus flavour.

River Mint
Origin: SA

River Mint has a flavour profile similar to peppermint and sweet spearmint alongside complex herbal elements; it's also know for its antioxidant properties.
