$139This whisky is an evolution of our very first Trials & Exceptions release, Sandigo Heritage Rye Malt Whisky. It echoes our belief that great whisky starts in the field, featuring a malted landrace rye grown near Sandigo, NSW that has adapted to droughts, floods and storms to evolve into its own distinct rye strain.
It marries heritage rye with a softer pale malt whisky, gently matured in heavily charred American oak casks to offer flavours of apple pie, brown butter, licorice and creme brûlée.

Tasting Notes


Flavour profile
Nose
Crisp Kanzi apples drenched in beurre noisette. The opening makes way for waves of hedonistic spice, whole black peppercorn, crushed ginger, and just a touch of eucalypt on the breeze.
Palate
The palate follows the nose, with spiced apple pie and shortcut pastry and creme caramel being followed by freshly shaved oak, cinnamon, cloves and black cardamom.
Finish
We are left with extensive spice notes of ginger, black pepper and cayenne pepper intermingled with well-integrated oak and freshly cut apples.

This landrace rye has been grown in central NSW for over 70 years, adapting to droughts, floods and storms to evolve into its own distinct strain, found nowhere else on earth. Reflecting the character of regional Australia, it contributes flavours of eucalyptus, shortbread and cinnamon.

Our pale malt speaks to the Australian land where it was grown, delivering tropical fruit flavours with floral overtones.

Virgin American Oak is renowned for imparting high levels of vanilla, sweet spices and coconut. The oak in these casks is air-dried then toasted and charred for us to help create our signature flavour profile.
