The twentieth release in our Trials & Exceptions series, Infrared Toasted Cask Heritage Rye Malt Whisky is the first expression of the experimental cask-toasting methods we’ve been trialling in recent years. With a rich, round and complex nose that balances assertive baking spices with a generous oak sweetness along with vanilla custard, fondant icing, leather and sultanas, smelling this whisky is like walking into a patisserie in the depths of winter.

Tasting Notes
Nose
A rich, round and complex nose which balances assertive kitchen spices with a generous oak sweetness. There are notes of homemade ginger bread, cinnamon scrolls, pecan pie, creme anglaise, wedding cake icing, well aged leather and sultanas. Like walking into a patisserie in the depth of winter.
Palate
Structured and rich with the flavour of well brewed black tea, licorice bullets, tobacco, maple syrup, dried citrus peel. The oak gives a drying intensity to the palate which gives backbone and an overt savouriness.
Finish
Finishes long and lingering with raspberry jelly, tiramisu and stout. A bold whisky with depth and complexity which delivers flavour in spades.
Local & Ethically Sourced Ingredients
The rich and well-structured palate has flavours of well-brewed black tea, licorice bullets, tobacco, maple syrup and dried citrus peel, resting on a sturdy foundation of savoury oak and leading to a long and lingering finish of raspberry jelly, tiramisu and stout.
Instead of traditional methods of toasting barrels with naked flames, the oak casks were toasted using infrared heat, offering precise control and an elegant spectrum of flavours, compared to conventional toasting or charring.
Our pale malt speaks to the Australian land where it was grown, delivering tropical fruit flavours with floral overtones.
This landrace rye has been grown in central NSW for over 70 years, adapting to droughts, floods and storms to evolve into its own distinct strain, found nowhere else on earth. Reflecting the character of regional Australia, it contributes flavours of eucalyptus, shortbread and cinnamon.
