Since 2014, we've archived a case or two of every Australian spirit we've produced at both our Rosebery and Botany Distilleries. To celebrate our tenth birthday, from 21 October we'll be dropping a limited selection of this archival stock via our website, giving you the opportunity to grab a final bottle of your favourite Archie Rose spirit.
As the second spirit in our two-part honey series and the older sibling to Eau de Bee Honey Spirit, Honey Barrel, Barrel Aged Honey Spirit celebrates the splendour of Beechworth Blue Gum honey and the diligence of the bees that created it.
Released in 2022 and fermented in our bespoke Washback no.12 for seven days and then cold distilled, this spirit is matured in ex-moscatel casks at our Botany Distillery. The result is a harmonious blend of oak and honey with flavours of golden syrup, buttered toast, vanilla pudding, and chervil.

Tasting Notes
Nose
Initially greeted with buttered toast drenched with golden syrup, vanilla bean and lemon curd. Evolving into apricots, white chocolate, chervil and honeysuckle.
Palate
Soft and syrupy, with golden syrup and lemon curd making way for paw paw, coconut and a hint of clove.
Finish
A captivating finish of macadamia nuts, grapefruit zest, cedar and honey.

The leaves from the Lemon Scented Gum tree are long and slender with a beautiful lemon fragrance when crushed. The aromatic lemon scented gum used in our spirits is grown by Cyan and Martin at Bunyip Hollow in Victoria.

A classic gin botanical, Juniper (Juniper Berries) tastes piney, citrusy, woody and floral. The citrusy undertones lend a zesty and refreshing touch, while the woody aspect offers a hint of warmth and depth.
Waxflower has aromas of lemongrass, beeswax and anise, delivering herbal depth and complexity alongside sharp citrus similar to lemon myrtle.
Sunrise Lime is somewhere between a finger lime and calamondin - it's juicy and sharp in flavour, offering bright and zippy citrus notes.
