Nose

Incredibly complex, intertwining sun-dried raisins, bush honey, and apricots with subtle undertones of eucalypt, sandalwood, and hazelnut butter.

Palate

Silky at the onset, unveiling glacé cherries and dried orange zest that smoothly transition into a deep, expansive mid-palate boasting rockmelon, roasted pecans, and dried jasmine flowers.

Finish

A prolonged and intricate interplay between cask and spirit concludes with a crescendo of milk chocolate, bush honey, and lingering incense.


Local & Ethically Sourced Ingredients

Our Head Distiller Dave Withers has a personal connection to these casks through his father’s stories. “I have a clear memory of my dad passing on stories he heard about fortified wine barrels being made from native eucalyptus timbers in the 1930s. Many years later, I heard from one of our coopers about a small parcel of wine casks that had an oddly red colour to the timber.

I called my dad right away and told him what I had discovered. ‘Wow,’ he said. ‘That’s a piece of Australian history. Get those casks!”

Heritage Red Gum Cask
Origin: Australia

These casks were used for many decades to mature Australian fortified wines like tawny, apera and muscat, balancing the intensity of the eucalyptus flavours with the rich fruit character of those wines.

Amber Malt
Origin: New South Wales

Our local amber malt is made by roasting kilned malt which leads to a drier finish. it offers a light, biscuity flavour and dark reddish brown hues.

NSW Chocolate Malt

Toasted notes of dark chocolate, porter beer and coffee.
