This classic cocktail has come in and out of fashion through the years, but it's a timeless combination of raspberries and gin - it's always going to find its audience. The cocktail has got hidden depths, the dry vermouth dries and lengthens the drink, taking it out of the world of two-dimensional fruit cocktails and into a very pleasing late afternoon sipper.
Ingredients
10ml Dry Vermouth
20ml Raspberry Syrup
25ml Lemon Juice
Egg Whites
Method
Dry shake (shake without ice), and then add ice and shake again - whipping that egg up into a frothy frenzy - and strain into a cocktail glass. Garnish with some leftover raspberries.
