Yorokobi (Joy)
This is a joyful drink - inspired by the mandarin.
INGREDIENTS:
- 45ml Archie Rose x Horisumi - Spring Gin
- 30ml Mandarin & Vanilla syrup - (juice a mandarin and mix 1:1 with a vanilla sugar syrup)
- 15ml Lime
- 15ml Egg white
- 5ml Absinthe
METHOD:
Combine all ingredients, shake really hard for 15 seconds (without ice), then add ice and shake again. Fine strain into a small cocktail glass. We garnish with a citrus leaf and spritz of star anise distillate mixed with orange dye to create that mandarin look. Failing to have some star anise lying around the house is understandable, you could always make a tincture using some vodka, steep some star anise in there overnight and strain it off, mix with orange food dye and you’re good to go.
