Tucano’s partnered with Archie Rose
If you’re looking for something a bit unexpected, funky new bar Tucano’s has opened up in Surry Hills. The bar is bringing their vision of Modern Tiki to life, combining tropical flavours with an aperitivo twist. Expect to see bangers like the Princess Superstar (Archie Rose True Cut vodka, dry vermouth, thyme, guava, coconut water, verjus and fizz) and the Water of Youth (Archie Rose Straight Dry gin, Cynar, grapefruit wine, chamomile and lemon).
Developed by Steve Davis (ex Opera Bar) and Bec Bayley (ex-Savile Row, Before and After), the drinks aren’t typically the heavy juice-filled tiki drinks you’re used to, as they are balanced out and lengthened with amaros, vermouths and other unexpected elements.
The unique mix of worlds runs through the food as well, with Head Chef Naomi Lowry (Biota, Pilu, By Fassnidge) providing a ‘designed to share’ menu with tropical takes on Mediterranean fare, including Hiramasa kingfish bruschetta (with yuzu aioli, jalapeño salsa verde and fermented chilli), mozzarella and anchovy carozzas providing the perfect cheese pulls, and larger plates like the Bindaree short rib luau with tarp fondant and a Borrowdale pork cutlet served with crackling and pineapple and pepper agrodolce.

Botanica is a brand new Gin, Food & Spirits Festival coming to the Australian National Botanic Gardens in Canberra this September, 2023.
