Botanical Flip
Ideal for sour cocktail fans, this Botanical Flip is a textural palate fantasy with ginger, honey, pineapple and egg whites. Bright enough to drink with dessert but bold enough for seasoned drinkers, this is a fun and challenging cocktail.
Ingredients:
- 25ml Pineapple Juice
- 10ml Lemon Juice
- 15ml Ginger & Honey Syrup*
- 10ml Egg Whites
Method:
Add all ingredients to a cocktail shaker without ice. Shake gently to emulsify, then re-open the cocktail shaker and add ice. Shake again, then fine strain into a tall glass. Garnish with a floating dehydrated pineapple.
To make ginger and honey syrup add equal parts ginger juice, water and honey to a saucepan over low heat. Allow to simmer, stirring continuously (be careful not to burn or caramelise the honey) until solids are dissolved. Once combined, allow to cool and strain before using.
