Our newest signature serve for Bush Gin is a riff on the old school Red Snapper. The Green Snapper is a green juice with a spicy backbone and bush base. You can alter the juice and spice ratio as you see fit. But here is how we do it in the bar.
- 30ml Summer Gin Project: Bush
- Top with the below green juice
To make a batch of green juice (verdita) combine the following:
- 600ml green tomato juice
- 300ml green cucumber juice
- 1 stick of lemongrass
- 2 kaffir lime leaves
- Large pinch of pepper
- Large pinch of salt
- 5 coriander stalks
- 1 bunch basil
- 1 bunch mint
- 1 bunch Thai basil
- 4 jalapenos
- 100ml lemon juice
- 1 eschalot
- 100ml ginger syrup (1:1 ginger juice to sugar ratio)
Juice green tomatoes and cucumber.
Put all other ingredients (except gin) into a blender and blend with tomato and cucumber juice.
Build gin & juice over ice and garnish with a jalapeno.
