Flavour profile
Nose
Opens with flavours of sun-ripened yuzu, spring alpine meadows, bay leaves and fresh pine needles. The nose evolves over time to offer a complex array of flavours, including bonito flakes, fresh kelp, grapefruit, and black peppercorns.
Palate
The palate has a remarkable translation of flavours from the nose with a creamy texture which counterpoints the citrus and saline focal points.
Finish
The gin concludes with a subtly drying herbaceousness that is both bright and savoury.

John Dory is a prized saltwater fish celebrated for its delicate, mild flavour and subtle, firm, white flesh. A true delicacy, it is often regarded as one of the most refined choices from the sea.

A classic gin botanical, Juniper (Juniper Berries) tastes piney, citrusy, woody and floral. The citrusy undertones lend a zesty and refreshing touch, while the woody aspect offers a hint of warmth and depth.

Orris Root imparts flavours and aromas of flowers, hay and sweet earthy scents and a taste comparable to liquorice. It also helps to bind other flavours.

Sunrise Lime is somewhere between a finger lime and calamondin - it's juicy and sharp in flavour, offering bright and zippy citrus notes.
