Flavour profile

Nose

Opens on the nose with freshly cut pineapple as well as layers of fresh and dried citrus peel (grapefruit, orange and meyer lemon). As the whisky opens up a richer aspect makes itself known delivering salted caramel, malt chocolate, fire roasted hazelnuts, sticky date pudding, antique leather and sun dried sultanas. These more savory elements are offset by whipped cream and royal icing.

Palate

The palate is fantastically complex balancing the bright pineapple, banana and citrus flavours with figs, dates, milk chocolate and brown sugar.

Finish

The palate is evolving, long and with a precision that is supported by flavours of vanilla cream and belgian milk chocolate.

Australian Malt Whisky is a delicious new style of local whisky created by Australia’s most highly awarded distillery that gives people the opportunity to switch to a 100% Australian made product instead of deferring to international Scotch, bourbon, rye and blended whiskies. It is a 100% Australian made malt whisky versus a blended whisky, crafted from sustainably sourced, farm-grown Australian heritage rye and barley malts.

Heritage Rye MaltOrigin: Barellan, NSW

This landrace rye has been grown in central NSW for over 70 years, adapting to droughts, floods and storms to evolve into its own distinct strain, found nowhere else on earth. Reflecting the character of regional Australia, it contributes flavours of eucalyptus, shortbread and cinnamon.

Virgin American OakOrigin: United States

Virgin American Oak is renowned for imparting high levels of vanilla, sweet spices and coconut. The oak in these casks is air-dried then toasted and charred for us to help create our signature flavour profile.

Virgin French OakOrigin: France

Virgin French Oak is best known for having more available extractives and imparting a higher level of spice (think nutmeg or allspice) and also wood polish. Generally we toast these barrels but don't char them.
